Choose your pork cuts

Graise Farm pork is sold by the half or whole hog. The price for the half or whole hog is based on the hanging weight. Hanging weight is approximately 74% of the live weight. Each hog is unique so sizes will vary. You will receive approximately 75-80lbs of pork for a half hog (150-160 for whole hog). Total amount of pork varies depending on hog size and custom pork cut selections.

The exciting part of ordering a half hog, besides knowing where your pork comes from, is that you choose the pork cuts! You can order the traditional pork chops, ham and bacon, but you can also go outside-the-box and try cooking new pork products not typically found in the grocery store, such as liver, lard, heart, tongue, jowls, hocks. You can find recipes online to utilize almost every part of the pig. 
Once pigs are delivered to the meat processor, we will notify you of the final cost of your hog by email. Please see payment instructions below. Note that two separate payments will be required.  Orders must be picked up at the processing facility.

We will help guide you through the cut ordering process or you can work directly with the processor. You are responsible for picking up your meat at the processor's facility.


below is some information to think about before PLACING your CUT order.

Standard Pork Cuts
A typical processing order for a half hog might look like this:
  • bacon or side pork –10lbs
  • pork chops –19lbs (30 chops at ¾” thick)
  • ham roasts or steaks –20lbs
  • country style ribs, shoulder roasts  –11lbs (7 at 1”)
  • roasts or steaks –10lbs
  • spare ribs - 3lbs
  • hocks or sausage - 4lbs
  • ground pork –5lbs
  • back fat (to render lard) - 10lbs
  • leaf lard - 1lb
  • pork liver - 2lbs
The list above is based on a 275lb hog (lbs are approximate and will vary depending on the actual weight of the hog). If you have other pork cut ideas, ask about alternative cut options.
Consider your cooking style to help guide your pork cut decisions:
  • How thick do you want your pork chops(1/2”,¾”, 1")?
  • Do you want pork loin or pork chops? These come from the same area. You can choose one or the other or half and half. 
  • Do you want fresh or smoked pork? Commonly smoked cuts are ham and bacon. Other cuts can be smoked, but we strongly recommend trying them fresh to experience their true flavor. Note: There is an extra charge and time for smoking. 
  • Do you want extra meat to go to ground pork or brats? 
  • Would you like bacon or pork belly? These come from the same section. You can choose one or the other or half and half. 
  • Do you want lard or leaf lard for cooking/baking? Fat will come in a package and you render it at home. See our recipe page for tips on rendering.  
  • Would you like to keep less common cuts, such as pork liver, heart, tongue? 
All pork will be frozen when you pick it up. Fresh cuts will be available within a week of ordering. Smoked items may take 2-3 weeks to cure and smoke.

​Payment
Once the pigs are delivered for processing, you will receive an email with an invoice that confirms the final price based on the hanging weight of the pig. Please make the check payable to Graise Farm LLC and mail to Graise Farm within five days of receiving the invoice:
