GRAISE Farm STEW HEN Order Form
Stew birds are older laying hens. Their meat is tougher, but very flavorful. A much longer cooking time is required to tenderize the stew meat. This type of meat is best used for making homemade broth or stock. Make a large batch and freeze or can it. When roasting to use the meat, expect to roast it for at least 12 hours or overnight. Stew chicken or duck is also great canned. Note a pressure canner is required to properly can meat or broth.
